Oven baked oat and pecan nut biscuit with a delicious chocolate sauce. .

Ingredients

  • 2 cups flour
  • 1 cup  cake wheat flour
  • 1 cup brown flour
  • 4 tablespoons cocoa powder
  • 2 teaspoons  bicarbonate of soda
  • 3-4 tablespoons water
  • 1 cup dessicatted coconut
  • 1 cup pecan nuts
  • 250g butter or rama
  • 3 tablespoons golden syrup
  • 2 teaspoons vanilla essence

Chocolate sauce

  • 6 tablespoons butter or margarine
  • 2 cups icing sugar
  • 4 tablespoons cocoa powder
  • 3 tablespoons fresh cream
  • 2 teaspoons vanilla esssence

Method for the oat and pecan biscuit

  1. Combine the dry ingredients together in a large mixing bowl.
  2. Heat a pan on the stove top on a medium heat setting.
  3. Stir in the butter or margarine and golden syrup.
  4. Allow the butter and syrup to melt.
  5. Combine the butter mixture and dry ingredients together.
  6. Add in the water if the mixture is to dry. Mix well.
  7. In a large greased oven proof tray, add the mixture.
  8. Press the mixture firmly to the base of the tray.
  9. Bake the biscuit on 180 degrees for 30 -40 minutes or until golden brown.
  10. Remove the oat and pecan biscuit from the oven and allow it to cool.

 Method for the chocolate sauce

  1. In a medium sized pot, melt butter, and milk on the stove top.
  2. Stir in the cocoa powder.
  3. Gradually add in the sifted icing sugar. Reduce the heat of the stove to a low setting.
  4. Stir the mixture continuously until the mixture becomes thick but has a pouring consistency.
  5. Pour the chocolate sauce over the warm oat and pecan biscuits. ( Work quickly with the chocolate sauce as it tends to harden quickly)
  6. When the chocolate sauce has harden, the oat and pecan biscuit can be cut into squares.
  7. Serve warm or at room temperature with a side accompaniment of ice cream.
