Oven baked oat and pecan nut biscuit with a delicious chocolate sauce. .
Ingredients
- 2 cups flour
- 1 cup cake wheat flour
- 1 cup brown flour
- 4 tablespoons cocoa powder
- 2 teaspoons bicarbonate of soda
- 3-4 tablespoons water
- 1 cup dessicatted coconut
- 1 cup pecan nuts
- 250g butter or rama
- 3 tablespoons golden syrup
- 2 teaspoons vanilla essence
Chocolate sauce
- 6 tablespoons butter or margarine
- 2 cups icing sugar
- 4 tablespoons cocoa powder
- 3 tablespoons fresh cream
- 2 teaspoons vanilla esssence
Method for the oat and pecan biscuit
- Combine the dry ingredients together in a large mixing bowl.
- Heat a pan on the stove top on a medium heat setting.
- Stir in the butter or margarine and golden syrup.
- Allow the butter and syrup to melt.
- Combine the butter mixture and dry ingredients together.
- Add in the water if the mixture is to dry. Mix well.
- In a large greased oven proof tray, add the mixture.
- Press the mixture firmly to the base of the tray.
- Bake the biscuit on 180 degrees for 30 -40 minutes or until golden brown.
- Remove the oat and pecan biscuit from the oven and allow it to cool.
Method for the chocolate sauce
- In a medium sized pot, melt butter, and milk on the stove top.
- Stir in the cocoa powder.
- Gradually add in the sifted icing sugar. Reduce the heat of the stove to a low setting.
- Stir the mixture continuously until the mixture becomes thick but has a pouring consistency.
- Pour the chocolate sauce over the warm oat and pecan biscuits. ( Work quickly with the chocolate sauce as it tends to harden quickly)
- When the chocolate sauce has harden, the oat and pecan biscuit can be cut into squares.
- Serve warm or at room temperature with a side accompaniment of ice cream.
