Lightly grilled bruschetta bread with a tomato and parsley topping. This versatile dish can be served as a snack or a starter.
Ingredient
- 1 Loaf bruschetta bread cut into diagonal slices
- Olive oil
- Garlic cloves
- 5-6 Cherry tomatoes cut into large chunks
- Fresh parsley
- 1/2 onion, grated
- 1 Teaspoon dried mix herbs
- Freshly milled black pepper
- Salt to taste
- 1/2 Teaspoon sugar
Method
- In a large non stick frying pan, stir in enough olive oil to cover the base of the pan.
- Allow the oil to heat on the stove top.
- Add in the onions and allow it to simmer until it turns a translucent color.
- Stir in 1 clove of sliced garlic.
- Add in the cherry tomatoes and allow to simmer.
- Season the tomato mixture with salt, sugar, dried herbs, black pepper and parsley.
- Simmer the mixture until the tomatoes begin to break down and the sugar is completely dissolved.
- Remove the tomato mixture from the stove top and set it aside.
- Place the bruschetta bread slices on a flat surface.
- Drizzle olive oil on the surface of the each bread slice.
- Gently rub the surface of the bread with the remainder of clove of garlic.
- Heat a non stick griddle pan on the stove top and drizzle a little oil.
- Lightly toast each side of the bruschetta bread until golden brown.
- Place the toasted slices of bread on a plate and add spoonfuls off tomato topping.
- This dish can be served as a starter or as snack.
