Lightly grilled bruschetta bread with a tomato and parsley topping. This versatile dish can be served as a snack or a starter.

Ingredient

  • 1 Loaf bruschetta bread cut into diagonal slices
  • Olive oil
  • Garlic cloves
  • 5-6 Cherry tomatoes cut into large chunks
  • Fresh parsley
  • 1/2 onion, grated
  • 1 Teaspoon dried mix herbs
  • Freshly milled black pepper
  • Salt to taste
  • 1/2 Teaspoon sugar

Method

  1. In a large non stick frying pan, stir in enough olive oil to cover the base of the pan.
  2. Allow the oil to heat on the stove top.
  3. Add in the onions and allow it to simmer until it turns a translucent color.
  4. Stir in 1 clove of sliced garlic.
  5. Add in the cherry tomatoes and allow to simmer.
  6. Season the tomato mixture with salt, sugar, dried herbs, black pepper and parsley.
  7. Simmer the mixture until the tomatoes begin to break down and the sugar is completely dissolved.
  8. Remove the tomato mixture from the stove top and set it aside.
  9. Place the bruschetta bread slices on a flat surface.
  10. Drizzle olive oil on the surface of the each bread slice.
  11. Gently rub the surface of the bread with the remainder of clove of garlic.
  12. Heat a non stick griddle pan on the stove top and drizzle a little oil.
  13. Lightly toast each side of the bruschetta bread until golden brown.
  14. Place the toasted slices of bread on a plate and add spoonfuls off tomato topping.
  15. This dish can be served as a starter or as snack.
