Mushroom and spinach pasta dish is flavoured in a cheese and cream sauce. This dish is lightly seasoned with fresh herbs and spices.


  • 1 tablespoon butter or margarine
  • 5 button mushroom, chopped
  • 1 cup spinach, finely chopped
  • 1/4 onion,grated
  • 1/4 green pepper, grated
  • 1 cup cheddar cheese
  • ½ teaspoon freshly ground black pepper
  • Salt to taste
  • 1 tablespoon flour
  • ½ cup milk
  • ½ cup fresh cream
  • 250g  pasta


  1. Cook the pasta as per the instructions on the packaging.
  2. Drain the water from pasta and set aside.
  3. In a pan heat butter or margarine until melted.
  4. Stir in the grated onion and green pepper.
  5. Simmer the onions and pepper until it has soften.
  6. Add in the chopped mushrooms and fry until it has turned a light brown.
  7. In a medium sized bowl, add in the flour, black pepper, grated cheese and milk.
  8. Stir the mixture well.
  9. Add the flour mixture into the pan of mushroom and add in the cream.
  10. Reduce the heat on the stove top.
  11. Stir the mixture continuosly to prevent lumps from forming in the sauce.
  12. Add salt to taste.
  13. Stir in the chopped spinach and allow it to heat through until it wilts.
  14. Add in the cooked pasta to the mushroom and spinach sauce and mix well.
  15. Serve the mushroom and spinach pasta dish hot with a side serving of green salad.
