Lightly seasoned chicken in a rich based tomato sauce tossed in pasta. This versatile dish can be served as a main or a side dish.


  • 1 chicken breast, skin and diced. (washed thoroughly)
  • Oil
  • 1/4 onion,grated
  • 1/4 green pepper, grated
  • Freshly ground black pepper
  • 2 cloves garlic, finely chopped
  • 1 teaspoon dried Italian or mixed herbs
  • ½ teaspoon chilli powder
  • 2ml turmeric
  • Salt to taste
  • 1 teaspoon sugar
  • 1/4 teaspoon of mixed coriander and cumin powder
  • 2 tomato, grated
  • 65g tomato paste
  • 2 sprigs spring onion


  1. Prepare the pasta as per the instructions on the packaging.
  2. Drain the pasta well and set it aside.
  3. Heat oil in a large sauce pan.
  4. Stir in the onion and green pepper and allow it to simmer until it turns a golden brown colour.
  5. Add in the garlic cloves, chilli powder, tumeric powder, black pepper, mixed herbs, mixed cumin and coriander powder.
  6. Simmer for 20 seconds and add in the finely diced chicken breast.
  7. Mix well to ensure an even coating of spices on the chicken pieces.
  8. Simmer the mixture for 5 minutes.
  9. Allow the chicken to brown then add in the grated tomato.
  10. Season with salt and sugar.
  11. The mixture should simmer for 5 minutes.
  12. Reduce the heat setting.
  13. Stir in the tomato paste and and allow to simmer for a further 5 minutes.
  14. Remove the chicken mixture from the stove top and stir in the cooked pasta. Serve the pasta hot.
