Lightly seasoned chicken in a rich based tomato sauce tossed in pasta. This versatile dish can be served as a main or a side dish.
Ingredients
- 1 chicken breast, skin and diced. (washed thoroughly)
- Oil
- 1/4 onion,grated
- 1/4 green pepper, grated
- Freshly ground black pepper
- 2 cloves garlic, finely chopped
- 1 teaspoon dried Italian or mixed herbs
- ½ teaspoon chilli powder
- 2ml turmeric
- Salt to taste
- 1 teaspoon sugar
- 1/4 teaspoon of mixed coriander and cumin powder
- 2 tomato, grated
- 65g tomato paste
- 2 sprigs spring onion
Method
- Prepare the pasta as per the instructions on the packaging.
- Drain the pasta well and set it aside.
- Heat oil in a large sauce pan.
- Stir in the onion and green pepper and allow it to simmer until it turns a golden brown colour.
- Add in the garlic cloves, chilli powder, tumeric powder, black pepper, mixed herbs, mixed cumin and coriander powder.
- Simmer for 20 seconds and add in the finely diced chicken breast.
- Mix well to ensure an even coating of spices on the chicken pieces.
- Simmer the mixture for 5 minutes.
- Allow the chicken to brown then add in the grated tomato.
- Season with salt and sugar.
- The mixture should simmer for 5 minutes.
- Reduce the heat setting.
- Stir in the tomato paste and and allow to simmer for a further 5 minutes.
- Remove the chicken mixture from the stove top and stir in the cooked pasta. Serve the pasta hot.
