Chicken and tomato spirals are tomato based pastry snacks that are lightly seasoned with herbs and spices.
Ingredients
- 500g ready to roll puff pastry (shop purchased)
- 2 tomato, grated
- 1 teaspoon Italian dried herbs (shop purchased)
- 1/4 onion, grated
- 1/4 green pepper,grated
- 2 cloves garlic,finely chopped
- 1 chicken breast, diced
- 1/2 cup grated cheddar cheese
- Oil
- 65g tomato paste
- 1 teaspoon sugar
- Salt to taste
- 2 sprigs spring onion,chopped
- 1 teaspoon chilli powder
- ¼ teaspoon turmeric powder
- ½ teaspoon coriander and cumin powder
Method
- Remove the pastry from the freezer and allow it to defrost at room temperature.
- For quicker results leave the pastry in the fridge overnight.
- In a heated pan add enough oil to cover the base of the pan.
- Stir in the grated onion and garlic.
- Â Allow the onion and garlic to simmer until it softens.
- Â Add in the grated green pepper and diced chicken.
- Stir in the chilli powder, turmeric powder, coriander and cumin powder.
- Â Allow the mixture to simmer for 30 seconds.
- Â Add in 1 sprig of finely chopped spring onion and grated tomato.
- Allow the tomato mixture to simmer for 5 minutes.
- Â If the tomato and chicken mixture tends to stick to the base of the pan, a little water can be added.
- Â Season the mixture with Italian herbs, salt and sugar.
- Â Add in the tomato paste and stir the mixture well.
- Â Stir in the remainder sprigs of spring onion and simmer the mixture for a further 2-3 minutes.
- Â Remove the tomato and chicken mixture from the stove top and allow it to cool.
- Â Unroll the pastry sheet onto a floured surface.
- Â Add the tomato and chicken mixture onto the surface of the pastry sheet. Ensure that the tomato mixture is evenly distributed on the surface of the pastry.
- Â Add in the grated cheese. Roll the pastry lengthwise to resemble a Swiss roll. Cut the roll into 2cm thick slices.
- Bake the tomato and chicken spirals on 180 degrees or until golden brown. Allow the tomato and spirals cool before serving.
