Chilli chicken stir fry is an authentically Asian flavoured dish seasoned with sweet and sour spices and sauces.


  • 2 pieces chicken breasts, cut into cubes
  • 2 sprigs spring onions, sliced lengthwise
  • 2 green chillies, cut into thin slices
  • 1 tablespoon oil
  • 2 teaspoon fish sauce
  • ½ cup soy sauce
  • 1 teaspoon peanut butter
  • 1 teaspoon brown sugar
  • 2 cloves garlic
  • 1 teaspoon ginger and garlic paste
  • 2 teaspoons oyster sauce
  • ½ onion, cut into chunks
  • ¼ green pepper, cut in large pieces
  • 1 carrot, sliced thinly using a peeler
  • 250 g of noodles or basmati rice


  1. Heat oil in a pan and brown the chicken.
  2. Stir in the ginger and garlic paste. Add the spring onion and garlic cloves.
  3. Allow the mixture to simmer until the spring onion has become translucent.
  4. Stir in the sliced chilli, onion, green pepper and carrot. Allow the vegetables to cook for 5 minutes.
  5. Add in the soy sauce, peanut butter, fish sauce, sugar and oyster sauce. Cook the mixture on a low heat until the chicken is done.
  6. Prepare the noodles or rice following the cooking instructions on the packet.

Serve the chicken stir fry hot with your choice of noodles or rice.
