Chilli chicken stir fry is an authentically Asian flavoured dish seasoned with sweet and sour spices and sauces.
Ingredients
- 2 pieces chicken breasts, cut into cubes
- 2 sprigs spring onions, sliced lengthwise
- 2 green chillies, cut into thin slices
- 1 tablespoon oil
- 2 teaspoon fish sauce
- ½ cup soy sauce
- 1 teaspoon peanut butter
- 1 teaspoon brown sugar
- 2 cloves garlic
- 1 teaspoon ginger and garlic paste
- 2 teaspoons oyster sauce
- ½ onion, cut into chunks
- ¼ green pepper, cut in large pieces
- 1 carrot, sliced thinly using a peeler
- 250 g of noodles or basmati rice
Method
- Heat oil in a pan and brown the chicken.
- Stir in the ginger and garlic paste. Add the spring onion and garlic cloves.
- Allow the mixture to simmer until the spring onion has become translucent.
- Stir in the sliced chilli, onion, green pepper and carrot. Allow the vegetables to cook for 5 minutes.
- Add in the soy sauce, peanut butter, fish sauce, sugar and oyster sauce. Cook the mixture on a low heat until the chicken is done.
- Prepare the noodles or rice following the cooking instructions on the packet.
Serve the chicken stir fry hot with your choice of noodles or rice.
