An easy savoury snack, perfect for picnics, lunch boxes or starters. Chicken chilli bites are well spiced with indian seasonings and deep fried till golden brown.

Ingredients:

  • 250g chicken breasts, cleaned and cut into bite size cubes
  • 1 packet chilli bite mix powder (shop purchased)
  • 4 green chillies, finely diced
  • 1 sprig spring onions, chopped finely
  • ½ a sprig mint, chopped
  • 2 teaspoons mixed ginger and garlic paste
  • Oil for deep frying
  • 1 teaspoon chilli powder
  • ½ teaspoon mixed cumin and coriander powder
  • ¼ teaspoon turmeric powder
  • 1/4 onion, diced
  • Salt and freshly ground black pepper to taste
  • Water to form a thick batter

Method:

  1. In a bowl combine the cubed chicken,salt, ginger and garlic paste.
  2. Add in the cumin and coriander powder, turmeric powder, chilli powder, and black pepper.
  3. Heat a non stick pan with 2 tablespoons of oil.
  4.  Simmer the chicken in a pan until cooked.
  5. In a separate bowl combine the mint, chillies, spring onion, 1 teaspoon ginger and garlic paste, onion and chilli bite powder.
  6. Add in water to form a thick batter.
  7.  Dip each chicken cube into the batter and deep fry in hot oil until it turns a reddish brown colour.

Serve hot with a savoury or sweet and sour dip. Portion size appropriate for 3-5 adults

Variation: the chicken can substituted for fish, pork of beef. Vegetables such as pumpkin, gourd or potato can also be used.
