An easy savoury snack, perfect for picnics, lunch boxes or starters. Chicken chilli bites are well spiced with indian seasonings and deep fried till golden brown.
Ingredients:
- 250g chicken breasts, cleaned and cut into bite size cubes
- 1 packet chilli bite mix powder (shop purchased)
- 4 green chillies, finely diced
- 1 sprig spring onions, chopped finely
- ½ a sprig mint, chopped
- 2 teaspoons mixed ginger and garlic paste
- Oil for deep frying
- 1 teaspoon chilli powder
- ½ teaspoon mixed cumin and coriander powder
- ¼ teaspoon turmeric powder
- 1/4 onion, diced
- Salt and freshly ground black pepper to taste
- Water to form a thick batter
Method:
- In a bowl combine the cubed chicken,salt, ginger and garlic paste.
- Add in the cumin and coriander powder, turmeric powder, chilli powder, and black pepper.
- Heat a non stick pan with 2 tablespoons of oil.
- Simmer the chicken in a pan until cooked.
- In a separate bowl combine the mint, chillies, spring onion, 1 teaspoon ginger and garlic paste, onion and chilli bite powder.
- Add in water to form a thick batter.
- Dip each chicken cube into the batter and deep fry in hot oil until it turns a reddish brown colour.
Serve hot with a savoury or sweet and sour dip. Portion size appropriate for 3-5 adults
Variation: the chicken can substituted for fish, pork of beef. Vegetables such as pumpkin, gourd or potato can also be used.
