Marinated in traditional Indian herbs and spices, the paneer is simmered in a non-stick pan and then tossed with onions, peppers and mushroom.

Ingredients

  • 500g paneer (see basic paneer recipe)
  • 1/2 red bell pepper, cut into large chunks
  • 1/2 green bell pepper, sliced into chunks
  • 250g white button mushrooms, rinsed
  • 1 large onion, cut into chunks
  • 125ml hot chili sauce
  • 1 large green chilli, sliced finely
  • 3 sprigs coriander, finely chopped
  • Salt to taste
  • 1/2 a teaspoon mixed dried herbs
  • Wooden skewers soaked in water for an hour
  • 1 teaspoon oil

Method

  1. In a large bowl combine all the ingredients together.
  2. Place a non-stick pan onto the stove top and heat on a moderate heat setting.
  3. Stir in the oil.
  4. Add in the marinated paneer only.
  5. Simmer the paneer for a few minutes until it browns.
  6. Remove the paneer from the pan and set it aside.
  7. Add in the peppers, mushroom, and onions.
  8. Simmer the vegetables for a five minutes then set it aside.
  9. Thread the paneer, peppers, mushroom, and onions into the skewers and grill in the oven for 3-5 minutes.
  10. Serve the chilli paneer skewers with a side serving of savoury rice or potato chips.
