Marinated in traditional Indian herbs and spices, the paneer is simmered in a non-stick pan and then tossed with onions, peppers and mushroom.
Ingredients
- 500g paneer (see basic paneer recipe)
- 1/2 red bell pepper, cut into large chunks
- 1/2 green bell pepper, sliced into chunks
- 250g white button mushrooms, rinsed
- 1 large onion, cut into chunks
- 125ml hot chili sauce
- 1 large green chilli, sliced finely
- 3 sprigs coriander, finely chopped
- Salt to taste
- 1/2 a teaspoon mixed dried herbs
- Wooden skewers soaked in water for an hour
- 1 teaspoon oil
Method
- In a large bowl combine all the ingredients together.
- Place a non-stick pan onto the stove top and heat on a moderate heat setting.
- Stir in the oil.
- Add in the marinated paneer only.
- Simmer the paneer for a few minutes until it browns.
- Remove the paneer from the pan and set it aside.
- Add in the peppers, mushroom, and onions.
- Simmer the vegetables for a five minutes then set it aside.
- Thread the paneer, peppers, mushroom, and onions into the skewers and grill in the oven for 3-5 minutes.
- Serve the chilli paneer skewers with a side serving of savoury rice or potato chips.
