Butternut soup infuses the rich flavours of thyme and fresh cream. This healthy soup is a perfect starter to any meal.

Ingredients

  • 1/2 butternut (medium size), peeled, deseeded and cut into cubes
  • Water
  • 50g margarine or butter
  • 1 cup of low fat fresh cream
  • Salt to taste
  • 1/2 teaspoon sugar
  • 1/2 teaspoon dried thyme

Method

  1. Heat a pot of water on a medium heat setting.
  2. When the water begins to boil, stir in the butternut cubes
  3. Allow the butternut cubes to cook until soft.
  4. Drain away any excess water.
  5. Using the back of a fork, mash the butternut until it forms a smooth uniform pulp.
  6. Return the butternut back to the stove top.
  7. Add in the butter or margarine and mix well.
  8. Stir in the sugar, thyme and fresh cream.
  9. For a smooth uniform texture the butternut and fresh cream mixture can be blended in a food processor.
  10. Season with salt to taste.
  11. Serve the butternut and thyme soup hot.
