Butternut soup infuses the rich flavours of thyme and fresh cream. This healthy soup is a perfect starter to any meal.
Ingredients
- 1/2 butternut (medium size), peeled, deseeded and cut into cubes
- Water
- 50g margarine or butter
- 1 cup of low fat fresh cream
- Salt to taste
- 1/2 teaspoon sugar
- 1/2 teaspoon dried thyme
Method
- Heat a pot of water on a medium heat setting.
- When the water begins to boil, stir in the butternut cubes
- Allow the butternut cubes to cook until soft.
- Drain away any excess water.
- Using the back of a fork, mash the butternut until it forms a smooth uniform pulp.
- Return the butternut back to the stove top.
- Add in the butter or margarine and mix well.
- Stir in the sugar, thyme and fresh cream.
- For a smooth uniform texture the butternut and fresh cream mixture can be blended in a food processor.
- Season with salt to taste.
- Serve the butternut and thyme soup hot.
